The Wonderful World of Cheese!

Beyond the world of Velveeta and Craft singles, is a huge world of cheese. Enter any gourmet food store, and you can find a veritable smorgasbord of cheeses.

Manchego, Brie, Stilton, etc. etc....

All of these wonderful cheeses have their story, and many styles date back hundreds of years.

Often the perfect accompaniment to that great bottle of wine, cheese is something that can be rich, creamy, sharp, or even stinky!

This month, we wanted to introduce you to a few new cheeses to try on your next wine and cheese party.

Le Roule:

This cheese is probably the most recently invented style to my knowledge. It was invented in France in the early 1980's and is a soft cow's milk cheese with parsley and garlic wrapped into a roll. It is very fresh and rich, and goes very well with a red wine!

Brie:

Brie is a soft, cow's milk cheese. There are many different styles of production, and it is generally poured into a mold. There is a hard rind on the cheese, which is totally edible. This cheese also does well with a full-bodied red, and can come in regular, double, or triple cream variety. The higher the cream count, the more like butter it tastes!

Manchego:

This cheese comes from Spain, and is made from the milk of Manchega Sheep. The cheese can be aged anywhere from a month to a year, and it gains flavor and complexity just like a wine! With a very distinct, slightly salty flavor, this cheese can be enjoyed with one of Spain's hearty red wines.
