The Key (lime)
to Success

         Recently, I enjoyed a meal at Morton’s Steakhouse with the beautiful and charming Merrissa. We thoroughly enjoyed the wine, steak and everything else that went with the meal. But, the highlight of the evening was dessert!

 

         We are both dessert lovers, and as soon as our eyes perused the words: Key Lime Pie, there was a simultaneous aura of happiness that engulfed us. I am not much of a lime eater, but for whatever reason I cannot deny this pie! We chewed with a jovial disposition, knowing that dessert would soon follow.

 

         Upon seeing the dinner plates cleared, I finished my last sip of pinot and then instructed my taste buds to prepare themselves for sweetness. The waiter brought our pie, which was so generous, we were able to share one slice. Merrissa sank her fork in and I was eagerly on the queue.

 

         Most key lime pies are made with some type of fluffy foam or confectioner’s concoction. I will not speculate as to what the ingredients are, but I will tell you that its visual appearance is lovely. Firm and colored nicely, with a dollop of whip cream on top. The lime zest swirls in the whip cream accent the dessert just right.

 

         The consistency was perfect, and the sweetness is something that was perfectly attained. When savoring the dessert, I found it has its own unique, dulcet quality. The crust was beautifully done, and had its own separate level of sweetness that neither overwhelmed or conflicted with the flavor that I just enjoyed nano seconds earlier. A perfect complement to the filling.

 

         I was so interested in this dessert that I spoke with the GM of Morton’s Hawaii, Mike Wilson. He proudly informed me that Morton’s key lime pie is a national recipe created by their corporate chef: Chris Rook, of Chicago. The recipe is disseminated throughout all Morton’s 80 restaurants in the country, and then followed to the letter by all chefs across the nation. This ensures that you will be able to enjoy your favorite dessert no matter which restaurant you eat in!

 

         This pie was created by the talented chef of the Honolulu Morton’s: Andy DeGamo. He and his staff have obviously perfected the re-creation of the recipe birthed by Chris Rook. When we were finished, we talked about returning sometime to just enjoy a slice of the key lime pie. It’s really that good.

 

         My evening was now complete. Great food, wine, and company...topped off by this wonderful dessert.
